Bonus time! The sauteed broccolini is a bonus Barefoot Blogger recipe for the month of March and it was chosen by Mary of Meet Me in the Kitchen. I actually made this to serve with the Chicken Piccata a few days ago. BeeBop and I were both kinda on the fence about it. I’ve cooked broccolini a few times in the past and we’ve never really been crazy about it. And, truth be told, this was much the same. Here’s what you need:
1 bunch broccolini
kosher salt
2 tblsp. unsalted butter
1/2 lemon, zested
1 tsp minced garlic
1 tblsp. lemon juice
1/4 tsp. black pepper
Here’s what you do:
Blanch the broccolini in a large pot of salted, boiling water for 2 minutes. Drain immediately an immerse in a bowl of ice water.
Melt the butter in a large saute pan. Add the lemon zest and garlic and stir. Drain the broccolini and add it to the garlic mixture and heat for 2 minutes. Add the lemon juice, 1/2 tsp. salt and pepper. Toss well before serving.
