Fruited Green Salad

Remember that new cookbook from my last post with the Creamy Shrimp and Pasta? Well, it also had a suggestion for a wonderful salad to accompany the shrimp dish. A green salad with most of the elements of a classic Waldorf Salad. Apples. Raisins. Pecans. Just a great combination of flavors. This salad made a great counterpoint to the creaminess of the shrimp and pasta sauce. And it’s very quick and easy to make.

6 cups of mixed greens or chopped Romaine lettuce
1 Gala apple, chopped
3 tblsp raisins
2 tblsp pecans, chopped

Chop the lettuce and apple.

Add to a bowl with the raisins and pecans.

Dress with this red wine vinaigrette (minus the shallots). Toss and serve!

Fruited Green Salad

A side salad with all the elements of the classic Waldorf Salad.

Ingredients

  • 6 cups of mixed greens or chopped Romaine lettuce
  • 1 Gala apple, chopped
  • 3 tblsp raisins
  • 2 tblsp pecans, chopped

Instructions

  1. Chop the lettuce and apple.
  2. Add to a bowl with the raisins and pecans.
  3. Dress with a red wine vinaigrette.
  4. Toss and serve.

This salad is simple and divine! Super yumm! I wonder how this would taste with pairs, as well. :D

Just give us some blue cheese or gorgonzola crumbles, and we’re all set. Love cheese with apples and dried fruits!
