Remember that new cookbook from my last post with the Creamy Shrimp and Pasta? Well, it also had a suggestion for a wonderful salad to accompany the shrimp dish. A green salad with most of the elements of a classic Waldorf Salad. Apples. Raisins. Pecans. Just a great combination of flavors. This salad made a great counterpoint to the creaminess of the shrimp and pasta sauce. And it’s very quick and easy to make.
6 cups of mixed greens or chopped Romaine lettuce
1 Gala apple, chopped
3 tblsp raisins
2 tblsp pecans, chopped
Chop the lettuce and apple.
Add to a bowl with the raisins and pecans.
Dress with this red wine vinaigrette (minus the shallots). Toss and serve!
Enjoy!

This salad is simple and divine! Super yumm! I wonder how this would taste with pairs, as well.
Oh, yeah…pears!! With a little bleu cheese, too. Great idea!
Oops, I meant pears. Please forgive my spelling mistakes, I’m eating and typing at the same time.
