Mixed Berry Cobbler

I think anyone who regularly visits this space understands that I am just an average, all-American kind of cook. I tend to make recipes that are pretty easy, pretty familiar, and most of all tasty. I mostly use ingredients you can find in your local grocery store and most of my recipes can be prepared for a family dinner after you’ve already worked all day.

This one is certainly no exception to those rules. It’s definitely all-American! Cobblers (or slumps, or grunts, or bettys, or whatever you want to call them) were being made by our earliest settlers using whatever fruits they found at hand. They’ve been around a lot longer than the all-American hamburger and hot dog. And, of course, the ingredients are all staples of any household…sugar, flour, milk, butter.

This easy recipe makes a cobbler that is buttery, moist, and not too sweet. You can make it up in just a few minutes of prep time and let it cook in the oven while you prepare dinner. Serve it with a scoop of vanilla ice cream dusted with cinnamon. Yummy, all-American goodness!

1 ¼ cups sugar
1 cup self-rising flour
1 cup milk
½ cup butter, melted
3-4 cups mixed berries, fresh or frozen
½ tsp. cinnamon

Spray a baking dish with cooking spray and set aside.

Whisk together 1 cup sugar, flour, and milk until blended.

Whisk in the melted butter.

Pour batter into a lightly greased 12×8 baking dish and sprinkle berries over the batter. The mix of berries I used this time was strawberries, blueberries, raspberries and blackberries.

Mix remaining ¼ cup sugar with cinnamon and sprinkle evenly over the batter and berries.

Bake at 350 for 1 hour or until golden brown and bubbly.

Lovely. I wish I could have this for dessert tonight. A nice heaping plate of it. The weathers been really nice here lately and I think a cobbler would be a perfect way to celebrate the lovely upcoming fall weather.

I usually do something more like a crisp, dump the fruit in the bottom and have a biscuit/oat dough on top. I will have to give this a shot.

Yes, those are good, aren’t they? I call that a crisp, though, with the oatmeal topping. I hope you’ll try this one. It’s so very easy and, of course, you can use any kind of fruit!
