Did you know that only one-third of American workers say they actually take a lunch break? And another third typically spend lunch at their desks. 10% even admit to getting lunch from a vending machine at least once a week. Somewhere along the line, we busy American workers traded real lunches for grab and go eating.

Successful people know that a good, healthy lunch yields huge benefits in productivity later in the day. When we skip lunch or, even worse, grab the most convenient package of “junk” from the vending machine, we just ask for low energy in the afternoon.

I have to admit that I’m guilty of not taking good lunch breaks myself. Even though I work from my home and have a set time for a lunch break every day, there’s always something that I could be doing during my lunch hour.

I realized lately that I’ve fallen into the habit of just grabbing whatever leftovers might be in the fridge and taking a plate back to my desk to continue working. And I’ve also noticed that by about 3:00 in the afternoon, I wanted nothing more than to just take a nap.

So, I’m making a change. I’m committing to putting work aside for one whole hour during the day. And I’m going to make sure that what I serve myself for lunch is wholesome, fresh, and delicious. Like this Grilled Chicken, Apple, and Gouda Sandwich.

How to Make Grilled Chicken, Apple, and Gouda Sandwich

Heat a tabletop grill (I used a George Foreman) as the manufacturer recommends. Season the chicken breast cutlets on both sides with the seasoning blend. Place the cutlets on the grill and cook until golden brown and cooked through.

While the cutlets grill, toast the bread. Mix the mayonnaise and Dijon mustard. Spread each of the slices of toasted bread with the mayo-mustard mixture. Top with a grilled chicken breast cutlet, 2 slices of Sargento Gouda cheese, 1/4 of the apple slices, and 1/2 cup of salad leaves.

Ingredients
