One of the most fun things about being a food blogger is that you sometimes get to try new products being introduced by brands. A few years ago, I was asked to try a new barbecue sauce that was created by KC Masterpiece to mark the company’s 35th anniversary.

One of the things I learned, is that KC Masterpiece® was created by Dr. Rich Davis, who was a physician and barbecue aficionado, in Kansas City in 1978 and won “Best Sauce” at the first ever American Royal Barbecue sauce competition. This special anniversary sauce, KC Masterpiece® Kansas City Classic barbecue sauce, pays tribute to the original “Blue Ribbon” blend.

If you’re a barbecue lover, then when you see this sauce in your grocery store, grab a bottle! I can guarantee that you’re going to like it. I think it has a very traditional barbecue flavor that hits just the right combination of sweet and tangy without any one thing overpowering the other. It’s really delicious and I’d use it for any of my grilling or barbecue recipes.

I use it in this BBQ Bacon Wrapped Meatloaf which I serve with a delicious peach relish on the side. BeeBop said I already had him on board with bacon and meatloaf but adding the Kansas City Classic sauce really put it over the top. I agree!

How to Make BBQ Bacon Wrapped Meatloaf

Preheat the oven to 375 degrees. Line a baking sheet with foil. Spray lightly with cooking spray.

Mix ingredients for BBQ Bacon Wrapped Meatloaf

 

In a large bowl, combine the beef, pork, onion, green bell pepper, Worcestershire sauce, salt, pepper, egg, oats, and 1/4 cup barbecue sauce. Mix well.

Now for me, the best way to mix up a meatloaf is just to take your rings off and get your hands right in there. However, I know some people don’t like the feel of raw meat. So, if that’s you then you can use a sturdy wooden spoon or even put it all in your stand mixer with a paddle and mix it on low speed.

Shape the loaf for BBQ Bacon Wrapped Meatloaf

 

Turn out the meatloaf mixture onto the prepared baking sheet and shape it into an oblong loaf. Brush an additional 2 tablespoons of barbecue sauce onto the top surface of the meatloaf.

Completely cover the surface of the meatloaf with bacon tucking ends under and around the sides.

Add more sauce to the top of BBQ Bacon Wrapped Meatloaf

 

Bake for about 1 hour or until the internal temperature reaches 155 degrees. About 10 minutes before the end of cooking, remove the meatloaf from the oven and brush the top and sides with an additional 1/4 cup of barbecue sauce. Return to the oven to finish cooking.

Allow the meatloaf to rest for about 10 minutes before serving.

Make the peach relish for BBQ Bacon Wrapped Meatloaf with Peach Relish

 

While the meatloaf cooks, make the relish. Combine all ingredients for the relish in a small bowl. Toss together and allow to sit at room temperature until ready to serve.

Ingredients

For the meatloaf:

  • 1 pound ground beef
  • 1 pound ground pork
  • ¾ medium onion diced
  • ½ medium green bell pepper diced
  • 2 teaspoon Worcestershire sauce
  • ½ teaspoon salt

  • ½ cup quick oats
  • ½ cup plus 2 tablespoons KC Masterpiece® Kansas City Classic barbecue sauce

For the Peach Relish:

  • 2 cups diced fresh peaches
  • Juice of 1 lime
  • ¼ medium onion diced
  • ½ sweet red pepper diced
  • 1 jalapeno diced
  • Dash of salt and pepper
