What does “comfort food” mean to you? It’s almost impossible to define, isn’t it? It really means something different to everyone.

For a southerner like me, it might mean fried chicken and cornbread. Or okra and tomatoes. Or field peas with sliced tomatoes. It really depends on the season and the reason.

Comfort food for cold weather is completely different than comfort food for the summer. And comfort food for when you’re homesick is a different thing from comfort food for a heartbreak.

This Banana Bread Cobbler uses ingredients that you probably have in your kitchen right now and takes, at the most, 15 minutes to pull together. Pop it in the oven while you’re getting the rest of your meal done and then just sit back and enjoy the compliments.

How to Make Banana Bread Cobbler

Make batter for Banana Bread Cobbler

Preheat the oven to 375. In a large bowl, whisk together the flour, sugar, and milk until just blended. Whisk in the melted butter. Pour the batter into a lightly greased 11×7 baking dish.

Top with the banana slices.

Make the Streusel Topping

Make streusel topping

To make the streusel, in a medium bowl use a fork to stir together the brown sugar, flour, and butter until a crumbly mixture is achieved. Stir in the oats and pecans.

Add streusel topping to Banana Bread Cobbler

Sprinkle the streusel mixture over the banana slices. Bake for 40-45 minutes or until golden brown.

Serve with a scoop of vanilla ice cream.

Ingredients

  • 1 cup self-rising flour
  • 1 cup sugar
  • 1 cup milk
  • 1/2 cup butter melted
  • 4 medium-size ripe bananas sliced
  • Streusel topping
  • Vanilla ice cream

For the streusel:

  • 3/4 cup packed light brown sugar
  • 1/2 cup self-rising flour
  • 1/2 cup butter softened
  • 1 cup uncooked regular oats
  • 1/2 cup chopped pecans

  3. My comfort food since the late 1940’s — green beans slowly simmered with bacon and a side of crispy-edged cornbread (baked in a cast iron skillet, of course). Although my Mom, Grandma, and the two favorite aunts are no longer here to cook it for me, they taught me how to make it. So I’m always surrounded by family when I’m cooking me some green beans.

    First I have to comment on this wonderful recipe. I apply the ‘wonderful’ adjective because of your point—-ingredients I readily have on hand and quick. Comfort food for me is probably either
    meatloaf with mashed potatoes and gravy or mac and cheese. Oh yeah dessert would be a bread pudding of some sort.

  15. I come from Georgia, so my favorite food, after fried chicken, of course, has to be pecan pie. But now I live in Texas, so that pie is now twice as good because I can drown it with Blue Bell homemade vanilla ice cream. Nothing else on earth comes close!

    I have several favorite comfort foods…I love chicken and dumplings, chicken, keilbasa & rice (aka: chicken bog), my moms butter beans, and banana pudding…just not all at the same time! =)

Having said that I think my all-time favorite comfort food is turkey & cornbread dressing w/mashed potatoes and giblet gravy.       Mine as well, I remember in the 50s , the store Woolworth’s had a restaurant, and they served the best meatloaf , mashed potatoes, and gravy. My mother took me there as a child, and ordered that. I’ve never forgot that I thought that was the best. I still love meatloaf and mash potatoes with gravy today.

      Ps. that was over 65 years ago.

    When I think of comfort food the first thing that pops into my mind is my grandmother. Of course grandmas are well known for great food. For winter it would have to be a very creamy macaroni and cheese, of course with a Vermont sharp cheddar being that I am from new York originally. Summer would have to be the perfect combination of a strawberry rhubarb pie, that’s definitely refreshing on a hot day, of couse topped with homemade whipped cream. both of these recipies are great and easy to make and comforting of course. Whether you are from the north or south everyone loves some down home American comfort food.

  25. My favorite comfort food is actually a meal, not just one dish. Growing up, just about every Tuesday night, we had pan-fried ham steak with Coca Cola gravy, LeSeur peas, and yellow rice. Not gourmet and definitely easy, but the one meal I ask my mom to make when I have supper at their house!

    MY Banana Bread Cobbler is in the oven right now. This looked so good and as you said I had everything to make it. It reminds me of impossible pie that is also southern I think :-)
