Easy Chicken Bacon and Mushroom Sandwich

Chicken Bacon and Mushroom Sandwich on a whole grain boule, with garlic mayonnaise and layered with bacon, brie, caramelized onions, and mushrooms.


Oh good heavens! This may be just the thing for school nights – wrap ’em up and let the “boys” heat them when they are hungry!! Hope the foot is getting better!!

— Mayonnaise — Garlic — Thyme leaves — Olive oil — Mushrooms — Skinless chicken breasts — Boule whole grain bread


You’ll caramelize some onions and mushrooms in a large skillet.


When the onions and mushrooms have finished cooking, put them in a bowl to the side and cook the bacon in the same pan. Cut the chicken breasts crosswise into thick slices.


Slice the boule through the center and remove most of the soft interior of the bread. Generously spread the cut sides of the bread with the mayonnaise mixture.


Layer the base of the boule with bacon, thick slices of brie, the sliced cooked chicken breasts, and the caramelized onions and mushrooms.
