Glorious fresh strawberries top a whipped cream and cream cheese layer over a chocolate cookie crust.

Ingredients
3.5ouncesdark chocolatechopped
25chocolate wafer cookies(recommend: Nabisco’s Famous Chocolate Wafers)
2teaspoonscanola oil
Cooking spray
6ouncescream cheeseroom temperature
1cupheavy whipping cream
3tablespoonssugar
½cupconfectioner’s sugar
¾teaspoonvanilla
1poundstrawberrieswashed, dried and sliced in half
2tablespoonsseedless strawberry jam
Instructions
Place the chopped chocolate in a small microwave safe bowl. Microwave on high, stirring every 15 seconds, until chocolate is melted (about 45-60 seconds).
Put the chocolate cookies in a food processor and process until finely ground. Add the melted chocolate and oil and pulse until thoroughly combined.
Coat a 9-inch pie plate or a removable-bottomed tart pan with cooking spray. Gently press the cookie crust mixture evenly onto the bottom and up the sides of the pan. This is easier to do with buttered or oiled hands.
Place the crust in the freezer for 15 minutes to harden and set.
Meanwhile, whip the cream to soft peaks. Add the 3 tablespoons of sugar. In a separate bowl, beat the cream cheese, confectioner’s sugar, and vanilla. Fold the whipped cream into the cream cheese mixture. Carefully spread the mixture over the chilled crust.
Arrange the berries in an attractive pattern on top of the whipped cream and cream cheese mixture. Cover with plastic wrap and refrigerate until ready to serve.
When ready to serve, heat the strawberry jam for 10-15 seconds in a small microwave safe bowl. Brush the melted jam over the strawberries as a glaze.
