Ingredients
For the bars:
½cupbutterroom temperature
½cupgranulated sugar
½cuplight brown sugar
½cupcreamy peanut butter
1egg
1teaspoonvanilla
1cupflour
1teaspoonbaking soda
¼teaspoonsalt
½cupoatmealnot instant
6ounceschocolate chips
For the glaze:
¼cupcreamy peanut butter
1cupconfectioner’s sugar
4tablespoonsmilk
Instructions
Preheat the oven to 350. Grease a 9x13 baking dish or pan. Set aside.
Using a hand-held or stand mixer, cream the butter, sugars, and peanut butter. Add the egg and vanilla.
Sift the flour together with the baking soda and salt. Mix in the oatmeal.
With the mixer on low speed, gradually beat the flour-oatmeal mixture into the creamed mixture.
Spread the batter into the prepared baking dish or pan. Sprinkle the chocolate chips evenly over the top of the batter. Bake for 20-25 minutes until browned around the edges.
Remove from the oven and allow to cool for 10-15 minutes before preparing the glaze.
Make the glaze by combining the 1/4 cup of peanut butter, confectioner’s sugar, and milk in a small bowl, whisking until smooth. Spread the glaze evenly over the still warm bars.
Allow to cool completely. Cut into squares and serve.
