Ingredients
2poundsseedless green grapes(about 5 cups)
2poundsseedless red grapes(about 5 cups)
8ouncescream cheeseroom temperature
1/2cupsour cream
1/4cupgranulated sugar
2teaspoonsvanilla extract
1/4cuplight brown sugarpacked
1/4cuptoasted pecanschopped
Instructions
Remove the grapes fom the vines. Wash thoroughly with cold water. Allow the grapes to dry completely before proceeding with the recipe.
Add the cream cheese and sour cream to a medium bowl. Use an electric mixer (or wooden spoon or spatula) on medium-low speed to mix until thoroughly combined and no lumps remain.
Add the sugar and vanilla extract to the cream cheese mixture. Beat until well incorporated.
Add the dry grapes to the cream cheese mixture. Fold until the grapes are completely coated.
Cover and place in the refrigerator to chill for at least one hour and up to three hours.
When ready to serve, garnish with chopped, toasted pecans and brown sugar.
Notes
Recipe Tips:
Spread the grapes out on a layer of paper towel to speed up the drying time.
Be sure to use seedless grapes.
The salad may be served immediately, but a couple of hours of chilling time improves the flavors.
Using full-fat sour cream and cream cheese will result in the best consistency.
Storage:This easy grape salad is best prepared and enjoyed the same day. Leftovers can be stored for a short time in an airtight container in the refrigerator but the cream cheese mixture begins to thin out and become watery after a day.To Prep Ahead:To prepare the salad more than a few hours in advance, wash and dry the grapes and make the cream cheese and sour cream mixture. Store these in separate containers and combine them an hour or two ahead of serving time.
