My Easy Homemade Pineapple Cobbler is a great no-stress dessert! It's made with simple pantry ingredients and only 10 minutes hands-on time.

Ingredients
½cuplight brown sugarpacked
½cupgranulated sugar
1cupall-purpose flour
½teaspoonsalt
3teaspoonsbaking powder
1teaspoonground ginger
½cupsalted buttermelted and slightly cooled
¼cupreserved pineapple juice
1tablespoonhoney
1teaspoonvanilla extract
½cupwhole milk
20ouncescanned pineapple tidbits(reserve ¼ cup juice)
Instructions
Preheat the oven to 375 degrees F.
Prepare a 9 x13-inch pan with either butter or cooking spray and set it aside.
In a large mixing bowl add the sugars, flour, salt, baking powder, and ginger. Mix well.
Add in the melted butter, pineapple juice, honey, vanilla extract, and milk. Stir until well combined.
Pour the dough into the prepared pan.
Add the drained pineapple tidbits on top spreading them as evenly as possible. Slightly press the tidbits into the dough.
Bake in the preheated oven for 25 to 30 minutes or until the edges are set and golden brown in color.
Notes
To test for doneness, insert a wooden toothpick into the cobbler halfway between the edge and the center. It should come out clean if it's done.
Serve with a scoop of vanilla ice cream (or butter pecan!) or with a dollop of sweetened whipped cream and a drizzle of caramel sauce.
Place any leftovers in an airtight container in the fridge for up to 3 days. Rewarm individual servings in the microwave for about 30 seconds. Portions may also be reheated in an air fryer at 330 degrees for 3-4 minutes.
