For the bars:

  • ½ cup butter room temperature
  • ½ cup granulated sugar
  • ½ cup light brown sugar
  • ½ cup creamy peanut butter
  • 1 egg
  • 1 tsp. vanilla
  • 1 cup flour
  • 1 tsp. baking soda
  • ¼ tsp. salt
  • ½ cup oatmeal not instant
  • 6 oz. chocolate chips

For the glaze:

  • ¼ cup creamy peanut butter
  • 1 cup confectioner’s sugar
  • 4 tblsp. milk

  • Preheat the oven to 350. Grease a 9x13 baking dish or pan. Set aside.
  • Using a hand-held or stand mixer, cream the butter, sugars, and peanut butter. Add the egg and vanilla.
  • Sift the flour together with the baking soda and salt. Mix in the oatmeal.
  • With the mixer on low speed, gradually beat the flour-oatmeal mixture into the creamed mixture.
  • Spread the batter into the prepared baking dish or pan. Sprinkle the chocolate chips evenly over the top of the batter. Bake for 20-25 minutes until browned around the edges.
  • Remove from the oven and allow to cool for 10-15 minutes before preparing the glaze.
  • Make the glaze by combining the ¼ cup of peanut butter, confectioner’s sugar, and milk in a small bowl, whisking until smooth. Spread the glaze evenly over the still warm bars.
  • Allow to cool completely. Cut into squares and serve.
