With a similar texture to brownies, these peanut butter and chocolate chip bars make a great treat for grandkids and grandparents alike!
Servings 12 bars
For the bars:
- ½ cup butter room temperature
- ½ cup granulated sugar
- ½ cup light brown sugar
- ½ cup creamy peanut butter
- 1 egg
- 1 tsp. vanilla
- 1 cup flour
- 1 tsp. baking soda
- ¼ tsp. salt
- ½ cup oatmeal not instant
- 6 oz. chocolate chips
For the glaze:
- ¼ cup creamy peanut butter
- 1 cup confectioner’s sugar
- 4 tblsp. milk
Preheat the oven to 350. Grease a 9x13 baking dish or pan. Set aside.
Using a hand-held or stand mixer, cream the butter, sugars, and peanut butter. Add the egg and vanilla.
Sift the flour together with the baking soda and salt. Mix in the oatmeal.
With the mixer on low speed, gradually beat the flour-oatmeal mixture into the creamed mixture.
Spread the batter into the prepared baking dish or pan. Sprinkle the chocolate chips evenly over the top of the batter. Bake for 20-25 minutes until browned around the edges.
Remove from the oven and allow to cool for 10-15 minutes before preparing the glaze.
Make the glaze by combining the ¼ cup of peanut butter, confectioner’s sugar, and milk in a small bowl, whisking until smooth. Spread the glaze evenly over the still warm bars.
Allow to cool completely. Cut into squares and serve.
