Ingredients
For the meatloaf:
1poundground beef
1poundground pork
¾medium oniondiced
½medium green bell pepperdiced
2teaspoonWorcestershire sauce
½teaspoonsalt
½teaspoonpepper
1egg
½cupquick oats
½cup plus 2 tablespoons KC Masterpiece® Kansas City Classic barbecue sauce
¾poundbacon
For the Peach Relish:
2cupsdiced fresh peaches
Juice of 1 lime
¼medium oniondiced
½sweet red pepperdiced
1jalapenodiced
Dash of salt and pepper
Instructions
Preheat the oven to 375 degrees. Line a baking sheet with foil. Spray lightly with cooking spray.
In a large bowl, combine the beef, pork, onion, green bell pepper, Worcestershire sauce, salt, pepper, egg, oats, and 1/4 cup KC Masterpiece® Kansas City Classic. Mix well.
Turn out the meatloaf mixture onto the prepared baking sheet and shape it into an oblong loaf. Brush an additional 2 tablespoons of KC Masterpiece® Kansas City Classic onto the top surface of the meatloaf.
Completely cover the surface of the meatloaf with bacon tucking ends under and around the sides.
Bake for about 1 hour or until the internal temperature reaches 155 degrees. About 10 minutes before the end of cooking, remove the meatloaf from the oven and brush the top and sides with an additional 1/4 cup of KC Masterpiece® Kansas City Classic. Return to the oven to finish cooking.
Allow the meatloaf to rest for about 10 minutes before serving.
While the meatloaf cooks, make the relish. Combine all ingredients for the relish in a small bowl. Toss together and allow to sit at room temperature until ready to serve.
