Layers of potatoes, spinach, tomatoes, and cheese make a delicious and family-friendly gratin. Great side dish for almost any meal.

Ingredients
2Roma tomatoes
4green onionsdiced
3tablespoonsolive oil
20ouncespeeled, sliced potatoes(recommend using Simply Potatoes Homestyle Slices)
Salt
Ground black pepper
2teaspoonsdried oregano
3ouncesuncooked baby spinach
8ouncessharp white cheddar cheesegrated
1cupgrated Parmesan cheese
Instructions
Preheat the oven to 350 degrees.
Slice the tomatoes into approximately 1/4” slices. Chop the green onions using all the white and the tender green parts.
Drizzle half the olive oil in a baking dish or gratin dish. Place half the potatoes slices in an even layer in the dish. Lightly sprinkle with salt and pepper. Layer half the tomato slices. Sprinkle with half the oregano. Layer half the green onions over the tomatoes. Make a layer with the spinach. Lightly sprinkle with salt and pepper. Cover evenly with half the grated cheddar cheese.
Repeat with remaining potatoes, tomatoes, onions, and cheese.
Cover with foil and bake for 40 minutes.
Remove the foil and top with the grated Parmesan cheese. Return the dish to the oven and bake for an additional 10 minutes.
