Ingredients
8slicespurchased dinner ham
½cupmayonnaise
¼cupspicy whole grain mustard
1tablespoonsolive oil
1tablespoonsbutter
4eggs
8slicesmarbled rye bread
4slicessharp cheddar cheese
Salt
Pepper
Tomato slices
Lettuce
Instructions
Warm the dinner ham according to the package directions.
In a small bowl, stir together the mayonnaise and mustard. Set aside.
Add the olive oil and butter to a non-stick skillet set over medium heat. Carefully crack each egg into the pan and cook until the yolk reaches your desired level of doneness. Transfer the fried eggs to a plate.
Preheat the oven to 400 degrees.
Lay out 4 slices of bread on a baking sheet. Spread a generous amount of the mayo-mustard mixture on each slice.
Place one slice of cheese on top of the spread, followed by two slices of ham. Bake until the cheese begins to melt.
Remove the sandwiches from the oven and add a fried egg on top of each. Season with salt and pepper. Top with sliced ripe tomatoes and lettuce.
Top each with a second slice of bread generously spread with the mayo-mustard mixture.
Notes
To store leftovers, wrap them in aluminum foil or place them in an airtight container in the refrigerator. Reheat in the oven or microwave until warmed through.
To prevent yolks from breaking, crack the eggs into a small bowl first, then gently slide them into the hot pan. Cook on medium heat and avoid flipping for over-easy or sunny-side-up eggs.
