Peaches and Cream Muffins
These Peaches and Cream Muffins are great for a light breakfast or snack.
Servings 9 muffins
- 1 egg
- ½ cup sour cream
- ¼ cup vegetable oil
- 1 ½ cups all-purpose flour
- ½ cup sugar
- 2 tsp. baking powder
- ½ tsp. salt
- 1 cup chopped fresh peaches
- Cooking spray
Preheat the oven to 400 degrees.
In a medium bowl, beat together the egg, sour cream and oil.
Combine dry ingredients and sift into the wet ingredients. Stir together just until moistened.
Stir in the peaches.
Spray muffin tins with cooking spray and place a paper liner in each cup.
Fill cups ¾ full with batter.
Bake for 20 minutes or until a toothpick inserted comes out nearly clean.
