- Sliced dinner ham – Use your favorite sliced, fully-cooked ham for this recipe. I typically choose Hormel brand spiral sliced ham. You can also substitute sliced deli ham if you like.
- Mayonnaise and whole grain mustard: What’s a sandwich without a creamy spread? These traditional, familiar flavors are just the right combination.
- Olive Oil and butter: For frying the eggs. I like the combination of the two, but you do whatever you like.
- Marbled rye bread: I think the choice of bread matters as much, or even more, than the fillings in most sandwiches. Marbled rye adds a unique, earthy taste and is very visually appealing. My second choice would be pumpernickel – yum!
- Sharp cheddar cheese: What’s a ham sandwich without cheese? Sharp cheddar’s robust flavor goes really well with the ham and eggs.
- Tomato slices and lettuce: These typical sandwich garnishes add a bit of freshness and crunch.

🔪How to Make Ham and Egg Breakfast Sandwiches
- Warm the dinner ham according to the package directions.
- In a small bowl, stir together the mayonnaise and mustard. Set aside.
- Add the olive oil and butter to a non-stick skillet set over medium heat. Carefully crack each egg into the pan and cook until the yolk reaches your desired level of doneness. Transfer the fried eggs to a plate.
- Preheat the oven to 400 degrees.
- Lay out 4 slices of bread on a baking sheet. Spread a generous amount of the mayo-mustard mixture on each slice.
- Place one slice of cheese on top of the spread, followed by two slices of ham. Bake until the cheese begins to melt.
- Remove the sandwiches from the oven and add a fried egg on top of each. Season with salt and pepper. Top with sliced ripe tomatoes and lettuce.
- Top each with a second slice of bread generously spread with the mayo-mustard mixture.
⚠️ Troubleshooting Tips
- If you have any problems with eggs sticking to the pan, make sure the skillet is properly heated and greased with olive oil and butter.
- Adjust the cooking time of the eggs to achieve your preferred level of doneness. We like ours over easy!
🔀 Recipe Variations
- For a spicy kick, add some jalapeno slices.
- Substitute Canadian bacon for the ham.
- Add avocado slices, bacon, or hot sauce.
- Swap out the cheddar cheese for Swiss cheese, provolone, or American cheese.
- Experiment with different bread types like pumpernickel, whole wheat, sourdough, English muffins, or even a croissant.
🍽️ How to Serve
Serve with a side of hash browns or a fresh fruit salad along with coffee, tea, or fruit juice for a well-rounded breakfast.
🍚 How to Store
If you happen to have leftovers, wrap them in aluminum foil or store them in an airtight container in the refrigerator. Reheat in the oven or microwave until warmed through.
❓ Questions About Ham and Egg Breakfast Sandwich
Sure. You can explore alternatives like cream cheese, avocado spread, or a homemade aioli.
You can assemble the sandwiches the night before, wrap them in foil, and refrigerate them. In the morning, pop them in the oven to warm up.
Yes, of course, you can. Regular mustard will create a different flavor but will still complement the sandwich nicely.
To prevent yolks from breaking, crack eggs into a small bowl first, then gently slide them into the hot pan. Cook on medium heat and avoid flipping for over-easy or sunny-side-up eggs.

Would this be good with fried bologna instead of ham? Thanks. 😊
I haven’t tried it with fried bologna.
I know it may look pretty simple but putting together the mayo and the mustard like that gives this sandwich a special touch… a lovely combination with that ham!
I think it is great there is a month that is focused on bringing the family back around the dinner table! We eat together 5 nights a week and I believe it is the best thing for our family! Love this sandwich!
I love rye bread. It’s so good. Piled high with this amazing ham it’s even better. I’d love to sink my teeth into this gorgeous sandwich.
We always ate as a family growing up, I really can’t remember many nights that we didn’t and I think it’s important that families continue to do so. These sandwiches look like the perfect breakfast for dinner and that yolk! Perfection!
You just can’t beat that Hormel Cure 81 ham. I don’t know the significance of “81” but I know that it’s fabulous. Great new idea.

I think it’s very important, too. We always ate as a family when I was a child and we still do it now.
It’s afternoon and I’ve had neither breakfast or lunch yet. Those days when you want to devour the screen? Yes, that’s me now. Funny how I used to hate rye bread as a kid and love it now. Lucky for me I have some and I have some of this ham…seems I must make this sandwich right (yes I need your permission.)? :)
