I have two slow cookers, one large and one small, that I use all year round but when fall weather starts to appear, they get used even more than ever. I cook all kinds of things in my slow cookers. If it can be cooked low and slow, it usually goes in a slow cooker.

Cooler weather ushers in the season of soups, stews, and other recipes that benefit from the long, slow cooking provided in a slow cooker. They’re definitely one of the kitchen appliances that I wouldn’t want to do without.

I came up with this delicious family-friendly recipe for Slow Cooker Cheesy Potatoes and Ham a while back. This one is guaranteed to be a hit with everyone at the table. I’ve even included a great use for the leftovers, too, at the end of this post.

How to Make Slow Cooker Cheesy Potatoes and Ham

If I had to pick a side dish that I like best, it would probably be potatoes in some form or other. They’re just so versatile! And when I’m in a hurry, I have no problem taking some help from pre-packaged, pre-prepped potatoes. They’re a really good product and one that I use often.

Layer half the potatoes, mushrooms, and ham in slow cooker. Then add a second layer of potatoes, mushrooms, and ham.

In a large bowl, combine all the remaining ingredients. Stir until combined.

Then pour the mixture over the layered ingredients in your slow cooker. Cover and cook on high for 2 1/2 hours or until the potatoes are tender. After 2 1/2 hours, turn the cooker to low and continue cooking for 1 additional hour. Makes 8-10 servings.

This recipe makes an awful lot for just the two of us. There are always leftovers and one of our favorite ways to enjoy them is reheated with an over-easy egg on top for breakfast! Enjoy!

Ingredients

  • 40 ounces red potato wedges (recommend: Simply Potatoes brand)
  • 8 ounces fresh mushrooms sliced
  • 1 ½ pounds ham steak cut in cubes
  • 10.5 ounces cream of celery soup
  • ½ cup water
  • 4 ounces grated Cheddar cheese
  • 2 teaspoons dried parsley
  • ¼ teaspoon red pepper
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Instructions

  • Layer potatoes, mushrooms, and ham in slow cooker.
  • Combine all remaining ingredients in a large bowl. Stir until combined. Pour over ingredients in slow cooker.
  • Cover and cook on high 2 1/2 hours or until potatoes are tender. Turn cooker to low and continue cooking for 1 additional hour.

  1. This reminds me of a slow cooker dish that my mother-in-law has made ever since I’ve known her, and it’s been a favorite of my husband’s since he was a kid. A great comfort meal, for sure!

  2. Favorite slow cooker meal — diced ham (usually left-over), green beans, and chunked potatoes. Jane’s right — you can’t salt the meal until you check to see how much salt the ham has already added, especially if it’s a Smithfield ham.

  3. I also like to make soups & stew. I also like to make barbecued pork chops. I make my own BBQ sauce. I think that would be my first meal in the new slow cooker, but defiantly need to try the potatoes and ham recipe too.

  4. I would love to cook whatever i could if i had a new slow cooker. I love to cook and sometimes im short on time and if i can set that on during the day and tend to my daily things that would be amazing.

  5. Roasted chicken with dressing [stuffing]. My husband loves when I make this and there’s always leftovers for lunch the next day.

  6. I just put salisbury steak in my crockpot, but my favorite thing I make is lima beans and ham. My brother-in-law thinks I’m a wonderful cook because he loves this so much. Can’t convince him it’s the easiest thing I do. I use dried lima beans, not soaked, leftover picnic ham and water to cover. That’s it – no salt because you never know how salty the ham is.

  7. With a fancy slow cooker like that I would be using all the time. My husband has requested Pork Chops over Cheesey Potatoes. That would be the first dinner.

  8. First I would have to try the cheesy potatoes and ham then maybe a roast. Oh, and some applesauce with cinnamon would fill the house with lovely fall scents.
